As for the level designs, there are a lot of different kinds, but you'll need to go deep into the game to see them. However, this can be challenging as it is difficult to survive for long unless you cheat. Another exciting place to explore is the Tower of Golorp, which is accessible via an extra "up" staircase somewhere between the fifth and the fourteenth level of the dungeon. The Tower has unique layouts and monsters that are different from the main dungeon and is definitely worth the visit.
Overall, the Caves of Golorp project is a promising Prolog-based Rogue-like game that still has plenty of room for growth, but it's definitely a game that any hardcore fan of the genre should try out. The unique magic system, smart monsters, and well-designed levels provide an enjoyable experience, despite the current limitations in the available monster types.
